Cathal's jamWhile Scott Suchman takes pictures that will be put in Cathal Armstong‘s upcoming book from Ten Speed Press, I hover around the perimeter, pressing napkins, snatching toasted buttered brioche on the sly, running paces between the kitchen and the set, moving food from plate to plate to plate, marveling at Chef Armstrong‘s immense skill and talent. I also managed to scarf the lion’s share of a teetering tower of spiced beef and butter sandwiches.

Occasionally I take a snapshot of the sidelines, especially when something looks as pretty as this leftover toast and jam.

In July the two men – three actually because Eammon Armstrong, that lucky boy,  is accompanying them – will be in Ireland, seeing, eating and recording food and the makings of food. We shall see what they collect when the book appears in print. Bound to be beautiful.

The newest issue of Kernels is on  the stands now and includes a couple recipes from me. Both are delicious and doable, if I do say so myself.

Around this joint we eat lots of bread.  My son is still a no-condiment man so his panini will be pressed plain. (How he can choke down such a dry sandwich I will never know.)

Now and then I am fortunate enough to have a styling gig that is intended to improve the health and well-being of humans. This project was one. Add another master to the layers of masters.

I pledge allegiance to the flag of the united states of industry and to the republic for which it stands that I am a good provider, one person, under pressure to start where I am, use what I have and do what I can, indivisible I swear, with the light at the end of the tunnel being liberty, and justice being attended to as best as possible under the circumstances, for all in my household of two.

Lo and behold, I do. Work for hire I am, with a conscience that aims to be clear. Where can I sign on the dotted line for more of this kind? Work that is meant to lift someone up, hold their hand firmly but not so tight they cannot do their own work, and show them the light at the beginning of the tunnel, so the tunnel is not a tunnel, but instead it grows wider while growing older, and brighter too. Where do I sign for more of this kind?
